For the filling
2 tbsp ghee or butter
1 onion, diced
2 cloves garlic, minced
2 cups mixed veggies diced
3 celery stalk, diced
1/8 cup corn starch
2 cups vegetable broth
1 cup whole milk or heavy cream
2 pounds chicken thighs, cut up
salt to taste
1 tbsp dill weed
1 tbsp itailan seasoning
1 tbsp oregano
1/2 tbsp chili power
1/2 cup rice vinegar
1 tbsp paprika
Instructions
In a large skillet, melt ghee or butter over medium heat. Sauté onions, garlic, and celery until soft (about 5 minutes).
Add chicken let cook for 5 min, then add veggies, seasoning let cook for 5min.
Add vegetable broth, rice vinegar, corn starch and milk or heavy cream, stirring constantly until thickened (3-5 minutes). Enjoy your homemade no pot pie! I add crushed up tortillas to mine. You can find my tortillas recipe here.
